Cornbread Stuffed Peppers
Cornbread is one of my favorites and I wanted to try something different along with trying to create a new appetizer recipe. I had seen a recipe for cornbread with chopped peppers in it so that gave me the idea to stuff a pepper with cornbread. I decided to jazz it up a little with bacon, corn, and cheese.
Ingredients
2 tablespoons butter
2 teaspoons chopped garlic
16 ounces frozen corn
4 scallions chopped
8 strips bacon, cooked until crisp
20 cubanelle peppers16 ounces cornbread mix
2/3 cup milk
2 eggs, beaten
1/2 teaspoon pepper
1 cup cheddar cheese
Directions
In a large saute pan, over medium heat, melt butter. Add garlic, corn, and scallions. Cook for 10 minutes, stirring frequently. Add bacon to corn mixture. Mix well. Set aside to cool for 10 minutes.
Cut tops off peppers, cut in half legthwise, and remove seeds.
Add cornbread mix, milk, eggs, and black pepper to corn mixture. Mix well. Add cheese. Mix well.
Fill peppers with cornbread mixture.
Bake at 400 for 20 - 25 minutes.
