Coconut Shrimp
I hate coconut but I love coconut shrimp. The first time I had coconut shrimp I was at a family party. Everyone insisted that I just try one. It turns out that was the right choice and I brought coconut shrimp to the next 3 parties we went to.
Ingredients
1 pound 16 - 20 shrimp, peeled and deveined
1/3 cup cornstarch
3 eggs, beaten
1 1/2 cups shredded, sweetened coconut
cooking spray
Directions
Place shrimp in a medium bowl. Add cornstarch and mix until shrimp are completely coated.
Place coconut in a shallow bowl. Dip each shrimp in egg, then roll in coconut. Completely coat each shrimp with coconut. Place coated shrimp on a baking sheet. Spray shrimp with cooking spray.
Bake at 375 for 15 - 20 minutes, turning halfway through.
Serve with sweet chili sauce or mango salsa.
