Chorizo Bread
My husband saw a recipe for a bread stuffed with chorizo and cheese. I made it and it tasted great, but it was very messy to eat. I changed the reciped a little so it is more like a crostini and easier to eat. Now it is a new favorite when we get together with his family.
Ingredients
1 pound ground Chorizo4 cups shredded mozzarella cheese4 large Italian torpedo rolls
Directions
In a medium saute pan, over medium high heat, cook sausage, until browned . Add 2 cups of cheese. Mix well and reduce heat to medium low. Cook until cheese is melted. MIx well and set sausage aside.
Slice rolls into 3/4 inch slices and place on a baking sheet. Bake at 375 for 5 minutes.
Drop mixture by tablespoon onto each piece of bread. Sprinkle remaining cheese on top.
Bake at 375 degrees for 8 minutes.
