Blue Cheese Stuffed Mushrooms
Since many of my recipes have blue cheese as an ingredient, it is obvious that I love blue cheese. Unfortunately, I am the only person in my home who loves blue cheese, so those recipes are reserved for parties or when we have guests for dinner.
Ingredients
6 ounces crumbled blue cheese1/2 cup chopped scallions16 ounces light cream cheese18 mushrooms
Directions
All ingredients should be at room temperature. Remove stems from mushrooms and discard. Fill mushrooms with blue cheese mixture. Bake at 375 for 10 - 12 minutes, or until top of cheese just starts to brown.
Serve any remaining blue cheese mixture with crackers or celery.
Fill the mushrooms caps with the stuffing. Bake at 375 for 20 minutes.
