Beef Empanadas
My husband’s family loves empanadas and always asks me to make them. Empanadas are little pockets of seasoned meat. Some may have chopped vegetables and/or cheese. I usually serve them as part of a Mexican buffet or with Black Beans and Rice for dinner.
Ingredients
1/2 pound lean ground beef1 small onion, diced small16 ounces thick and chunky salsa1 tablespoon chili powder1 teaspoon cumin10 empanada discs
Directions
In a medium saucepan, cook the ground beef and onion over medium-high heat, breaking it up with a spoon until browned and crumbled.
Add salsa, chili powder and cumin to ground beef mixture. Mix well. Cook on medium low heat for 1 hour.
Put 2 tablespoons of meat mixture in the center of each empanada disc. Fold in half and seal edges by pressing down with fork. Place on a baking sheet.
Bake at 375 for 20 minutes.
